About the brewhouse

Zuni Street's heart resides in a 10 barrel brewhouse located just behind the taproom cooler wall, barely out of sight of curious customer eyes.

Manufactured in Lincoln, NE by Alpha Brewing Operations, this intricate and bustling system can brew up to 1,200 barrels per annum, and managed 1,071 barrels in year 1 of operations.

The steam-jacketed mash tun is accompanied by hot liquor tank, kettle, and four fermenters; three of which are 10 barrel tanks, and one 20 barrel vessel for double batches. A 10 and 20 barrel tank accompany the fermenters for carbonation, brightening, and sometimes, aging or storage.

Each of Zuni Street's batches is kegged and stored in the walk-in cooler, located directly between the brew house and the tap wall. Kegged beer flows directly into the taproom.

Willy’s training in brewing German, Belgian, and American style beers allows the brewery to boast a wide range of styles and flavors to suit any palate. Willy focuses his recipes on drinkability, refinery, and enjoyment, and regularly works to innovate new and better beers. Zuni Street Brewing Co. opened in March, 2017 and serves beer to the public seven days a week.
